For lunch, from Wednesday to Saturday lunchtime inclusive, from 12:15 to 14:00, a ‘Bistro Gourmand’ menu.

Sunday lunchtime, from 12.15pm to 2pm, the ‘Sunday Lunch’ gourmet menu.

For dinner, from Wednesday to Sunday evenings inclusive from 7.15pm to 9.15pm, the ‘Premium Cruise’ Menu with choice, and a ‘Seasonal Menu’.

The L'Ételle restaurant is located at the heart of the Hôtel Fleur de Sel ****, in Noirmoutier. Formerly known as the Fleur de Sel restaurant, it was founded in 1982 by Pierre and Annick WATTECAMPS. L'Ételle took off in 2023 as a separate establishment, continuing the family heritage while forging its own identity.
Since 2012, their son Pierrick has been passionately managing this institutional establishment, continuing a tradition of excellence and conviviality. Since 1994, head chef Eric PICHOU has been skilfully orchestrating the gastronomic creations that delight guests' taste buds, guaranteeing a culinary experience on every visit.

L'Ételle is much more than just a word, it's a vibrant tribute to the very soul of Noirmoutier, an island whose life has been profoundly influenced by the salt marshes for centuries. The Ételle is a traditional tool, a small wooden shovel which, in the expert hands of the salt-marsh workers, becomes the link between man and nature, between the island and the salt.
This shovel is used to harvest salt from the salt marshes. Its simple, functional design allows the salt crystals formed on the surface of the water to be gently removed, preserving their natural purity. The Ételle embodies a whole heritage of know-how handed down from generation to generation. It symbolises the perseverance of the people of Noirmoutre in their mission to harvest salt, the lifeblood of the island.
