L'Ételle is much more than just a word, it's a vibrant tribute to the very soul of Noirmoutier, an island whose life has been profoundly influenced by the salt marshes for centuries. The Ételle is a traditional tool, a small wooden shovel which, in the expert hands of the salt-marsh workers, becomes the link between man and nature, between the island and the salt.
This shovel is used to harvest salt from the salt marshes. Its simple, functional design allows the salt crystals formed on the surface of the water to be gently removed, preserving their natural purity. The Ételle embodies a whole heritage of know-how handed down from generation to generation. It symbolises the perseverance of the people of Noirmoutre in their mission to harvest salt, the lifeblood of the island.
